A guilty pleasure… To me that is a recipe with black bean sauce. And if you get that from the Chinese, it is usually too fat and you eat too many carbohydrates. Sometimes I also get a jar at the supermarket and now I thought: I'm going to make it myself. And it's nice that he turned out! The sauce is made with fermented black beans. But these are actually black soybeans. I bought a bag at the toko. When you open the bag you immediately smell that super spicy smell of the beans. And so you have a sauce that you can also keep closed in the fridge for a while.

We'll start with the sauce first. Put the beans in a bowl with some water and let them soak in it until they are nice and soft. Then rinse them and let them drain well.

-While the beans are soaking, we get to work with the rest of the ingredients for the sauce. Cut and chop all vegetables very fine and small. Take a frying pan and add some wok oil. When it is hot, add everything and fry it for a minute on high heat. Then you turn it down and let the vegetables get nice and soft. 

-Then add all wet ingredients, the rice wine, chicken stock and soy sauce. Stir it all together. Finally, add the beans and sugar and let it simmer. If it is still too wet at the end, add a cornflour paste to bind the sauce.

-Wash the pak choi well and pat it dry a bit, put in a frying pan with some wok oil and fry until al dente. I always add some soy sauce to that, which I find very tasty. Then set them aside for use.

-Fry the chicken thigh strips in the frying pan until they are golden brown and add a few spoons of black bean sauce. Let it soak in. You could also marinate the meat in the black bean sauce the day before for an even more intense flavor.

- Finally, we make the noodles. This is very easy: put on a pan with plenty of water and some salt and put the noodles in it. Soak them for four minutes and then rinse them with cold water.
