You often need a lot of time to make a stew, with this recipe you can stew the meat in a maximum of an hour. The herbs we use for the chicken thigh stewed are “Italian herbs” but secretly they are not quite. Because these herbs naturally grow in many more places than just Italy. Most spice mixes sold with the dried herbs are a blend of basil, oregano, rosemary, sage, and thyme. But parsley is also often used. You can often immediately recognize by the smell whether you have an Italian mix or, for example, a Provencal mix.

What you may not know about basil is that it originally comes from India. It is a spice that has been used in Indian cooking for a long time. But over time we have lost that a bit and we usually think that basil is typical of Italian cuisine. It is also the main ingredient in a delicious pesto, which you can easily make yourself. You need:

Ingredients:

  • 400 gr chicken breast
  • 4 Red onions
  • 10 ripe tomatoes ( size tasty tom )
  • 3 el kalamata olives
  • 250 ml past
  • 3 toes Garlic

And this is how you make it:

  • Start the night before. Cut the chicken thighs into cubes and season with salt, pepper and a lot of Italian herbs, a little olive oil and then leave to marinate in the fridge until use. (Remove the meat from the refrigerator before cooking to allow it to come up to temperature.)
  • Clean the onions and then cut them into quarters. Wash the tomatoes, but leave them whole.
  • Take your stewpan and add a dash of olive oil, then fry the chicken thigh cubes until they turn light brown. Add the chopped garlic cloves and onions and fry them for about 5 minutes.
  • Add the tomatoes and olives and pour in the passata. Lower the heat and let it simmer. The tomatoes will slowly pop open and release their moisture into the sauce. Let it simmer for an hour.
  • Cook a pasta of your choice, serve with some fresh basil leaves.
