- 3 el kalamata olives
- 250 ml past

- Start the night before. Cut the chicken thighs into cubes and season with salt, pepper and a lot of Italian herbs, a little olive oil and then leave to marinate in the fridge until use. (Remove the meat from the refrigerator before cooking to allow it to come up to temperature.)
- Clean the onions and then cut them into quarters. Wash the tomatoes, but leave them whole.
- Take your stewpan and add a dash of olive oil, then fry the chicken thigh cubes until they turn light brown. Add the chopped garlic cloves and onions and fry them for about 5 minutes.
- Add the tomatoes and olives and pour in the passata. Lower the heat and let it simmer. The tomatoes will slowly pop open and release their moisture into the sauce. Let it simmer for an hour.
- Cook a pasta of your choice, serve with some fresh basil leaves.
