You need:

  • 1 kg chicken thigh - (may be with bone)
  • 400 gr champignons
  • 250 ml cooking cream - 35% fat
  • 150 gr Parmesan cheese - grated
  • 3 toes Garlic
  • 1 citroen
  • 1 tablespoon Parsley - fresh

And this is how you make it:

  • Squeeze the juice from the lemon. Take a bowl and put the chicken thighs in it. Sprinkle with salt and pepper and massage into the meat. Pour in the lemon juice and add the persillade and let it rest for about 15 minutes.
  • Meanwhile, slice the mushrooms and squeeze the garlic cloves.
  • Heat a large frying pan and add a splash of olive oil. Fry the chicken thighs on both sides until golden brown. (this means done! so that takes about 15 minutes on medium heat) Then remove them from the pan and put them aside on a plate.
  • Add the mushrooms and garlic to the pan and cook until they start to soften.
  • Add the cooking cream and stir it all, then the Parmesan cheese and let it melt completely, the sauce will thicken a bit and look really nice and creamy.
  • Return the chicken thighs to the pan and let them warm in the sauce. Finish with the freshly chopped parsley and serve.

    1. Hi, no logically the chicken is done before it goes into the sauce to stew in it a little longer! Eating raw chicken is dangerous. Cook the chicken over a moderate heat for 10 minutes per side. Otherwise, check it by slicing the meat. Chicken thigh is not very thick meat so it does not take very long to cook.     A whole lemon with a kilo of chicken thighs doesn't make it very sour.

    Can you tell me how and how long you bake this or that you let it simmer in the sauce?

    1. Hi Corry, no logically I don't eat raw chicken. The chicken is fried for about 10 minutes per side. Not on too high a heat, of course, otherwise it will burn. Then let the chicken stew in the sauce for another 10 minutes or so. All in all, enough not to eat raw chicken.     It looks delicious and will be on the menu soon. I did not see cooking cream with 35% fat in the supermarket, but fresh cream. Do I get the same effect or do I have to look further? And it says "scoop the chicken out of the pan". If you use chicken thigh fillet, quite a lot of fat will be released from cooking. Do I leave the fat in the pan or do I drain it with the chicken so that there is no more moisture in the pan? Thanks in advance!

    Ooooh this looks tasty. I'm going to make it now and I made a mix of that persillade myself and secretly mixed some chives through it. And didn't have that many mushrooms in the house, so let dried mushrooms soak and then just add that. And I'm secretly going to add some Madeira. You're going to hear from me….the water is already running in my mouth…..now on to the kitchen!. Oops and mixed pecorini with parmesan because didn't have enough parmesan.

    Made the persillade myself, whipped cream instead of cooking cream added (35% fat)
    . Eaten with rice.
    Pan went completely empty here :-))
    Next time I will fry rice with small pieces of bell pepper and onion and serve it on the side.
