Chicken thigh in mushroom cream sauce
Eating meat, such as the chicken in this recipe, is increasingly discussed in our society. There are many disadvantages associated with meat production and consumption. Not only is it bad for the environment, due to nitrogen emissions from farmers and deforestation for livestock farming, but also for animal welfare, due to poor living conditions and the mass slaughter of animals.
I am a meat eater myself and I can enjoy this one chicken thigh in mushroom cream sauce and that won't change any time soon. You can make more conscious choices. Where do you buy your meat, how much do you eat it, do you choose organic and which pieces of meat do you eat?
As described above, we don't actually eat that much chicken thigh, but we usually opt for the fillets or legs. That's a shame, because chicken thigh is much more tender and juicy than other parts of the chicken. As far as I'm concerned, we buy all the parts, because they make the tastiest dishes, such as this chicken thigh in mushroom cream sauce.
This is definitely a great recipe that you can have on the table in no time. Of course, it is important to be aware of how often you eat chicken, both for personal health and environmental reasons. However, it is nice to enjoy a tasty piece of chicken every now and then, such as chicken thighs in a creamy sauce.

Yummy! Thank you for inspiring me.
Very tasty and not difficult to make! We licked our fingers!
That's great to hear Myra, glad you enjoyed it so much! Gr Francine
I would like to make this, but by persillade do you mean a spice mixture or a spice sauce?
Hi Carla, in this case the spice mix. (I developed 1 myself, it is for sale at Van Beekum online), but you can also make my own mix! Search my site for persillade and you will find a blog about it. Good luck with cooking, this is a winner, gr Francine
Very tasty recipe. I used 1 kilo of chicken thighs and some fresh thyme without substantially changing the recipe. For the "color" I did add carrot and frozen peas. Everything went up in one go! Thank you
Hi Tom, no thanks! He is doing very well this recipe, glad it tasted so good, gr Francine
delicious
this is really top notch
Very tasty, thank you for this delicious recipe.
Delicious
What a delicious recipe
We ate Burgundy bread with it!
This way the kids could leave the pan clean.
It was really delicious!!
We enjoyed it, congratulations and thank you for this delicious recipe.
Don't mention it! I hope you can eat it more often
Just made! Delicious dish!!
How long should the chicken continue to cook in the sauce? (When I read the recipe I get the impression that the chicken is still raw inside)
Hi, no logically the chicken is done before it goes into the sauce to stew in it a little longer! Eating raw chicken is dangerous. Cook the chicken over a moderate heat for 10 minutes per side. Otherwise, check it by slicing the meat. Chicken thigh is not very thick meat so it does not take very long to cook. Stewing in the sauce ensures that it is at least 100% cooked. Gr Francine
Hi
I want to make this dish for 8 people, can I make it a day in advance?
Hi Landa, yes that's fine, just warm up the next day, and cook some pasta for example! Enjoy your dinner

How many calories and what are the other nutritional values in this recipe
Hi, I have no idea, I don't calculate that, and I never actually look at it, but it is certainly not a light meal because of the amount of cream it contains. Gr Francine
Seems very tasteful to me, how long do you box those chicken thighs.
A whole lemon with a kilo of chicken thighs doesn't make it very sour.
Sincerely, Annemiek
Hi Annemiek, that differs per person, I am a fan of sour, but if you are not, add the juice of half a lemon. Start with that and see how you like it. Gr Francine
Looks delicious and be sure to save it to my Pinterest to give it a try soon.
But I do have a question for you….
You write; Fry the chicken thighs on both sides until golden brown
But I assume you didn't eat it raw.
Can you tell me how and how long you bake this or that you let it simmer in the sauce?
Hi Corry, no logically I don't eat raw chicken. The chicken is fried for about 10 minutes per side. Not on too high a heat, of course, otherwise it will burn. Then let the chicken stew in the sauce for another 10 minutes or so. All in all, enough not to eat raw chicken. If you are not sure, cut open a piece of chicken with a knife and check the doneness before you let it stew in the sauce. Enjoy your dinner! Greetings Francine.
Very tasty and easy to make. And it looked very nice! For the persillade I took the snail herbs at the Jumbo. Those are exactly the same.
It looks delicious and will be on the menu soon. I did not see cooking cream with 35% fat in the supermarket, but fresh cream. Do I get the same effect or do I have to look further? And it says "scoop the chicken out of the pan". If you use chicken thigh fillet, quite a lot of fat will be released from cooking. Do I leave the fat in the pan or do I drain it with the chicken so that there is no more moisture in the pan? Thanks in advance!
Ooooh this looks tasty. I'm going to make it now and I made a mix of that persillade myself and secretly mixed some chives through it. And didn't have that many mushrooms in the house, so let dried mushrooms soak and then just add that. And I'm secretly going to add some Madeira. You're going to hear from me….the water is already running in my mouth…..now on to the kitchen!. Oops and mixed pecorini with parmesan because didn't have enough parmesan.
Was delicious, I'm going to save this… but with fresh mushrooms and not dried ones like I just used. Thank you for the recipe.
Yummy!
I would have put half more mushrooms in it, this could have been more.
We thought this was a very tasty recipe. Will be on the table tonight for the 2nd time. yum
I've made it once and it was delicious. My question is can I also make it in the slow cooker
Very nice result!! Thank you.
Made the persillade myself, whipped cream instead of cooking cream added (35% fat)
. Eaten with rice.
Pan went completely empty here :-))
Next time I will fry rice with small pieces of bell pepper and onion and serve it on the side.
Very nice to hear! Glad it's a keeper in your kitchen too! Gr Francine
