Chicken satay with spicy salsa
I marinated these chicken satay skewers all night, so that the herbs are well absorbed into the meat and they are full of flavor. It's such a simple dish that you wonder why would I write it down, but there's always someone asking for the recipe. The flavors really come into their own when you prepare this dish on the barbecue. The chicken is buttery soft and juicy, making it a hit every time at family gatherings and barbecues.

Chicken satay with spicy salsa

Ingredients:
- 500 gram chicken thigh
- 2 el paprika powder
- 1 el curry powder
- 1 el onion powder
- salt
- peper
- ½ mango - in boxes
For the spicy salsa
- 400 gram diced tomatoes
- 1 Red onion
- 3 cloves of garlic
- 5 fresh parsley sprigs
- 1 Spanish / chili pepper
- 1 citroen - squeezed
- 1 tl cumin powder
- salt
- peper
- 2 el cornstarch
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cut the chicken thighs into small pieces and place in a bowl. Season with the herbs, spices, pepper and salt. Let it marinate for at least fifteen minutes, but preferably just overnight in the fridge.
- Remove the outer skin of the onion and remove the skin of the garlic cloves.
- Put all the ingredients for the salsa in the blender and whiz until everything is finely chopped and a kind of sauce has formed. (do not add the cornflour) Also add the lemon juice.
- Pour the sauce into a saucepan and heat over medium heat. Mix the cornstarch with some water in a bowl and add it to the pan. Stir until the sauce has thickened a bit. Season with salt and pepper.
- Thread a few pieces of chicken thigh onto a skewer and repeat until all the pieces are gone.
- Bake the satays in a frying pan or grill.
- Cut the mango into very small cubes.
- Spoon some sauce into a glass, add some mango and place the satay stick on top.
- Delicious bites!
