In this blog I give you a nice basic recipe for a classic Italian Giardiniera. “From the garden” that's what we put in the jar. Fresh vegetables from the garden and can actually be used in many different ways. There is some kind of base such as bell pepper, celery stalks, carrot, cauliflower. But that can be avoided. In the Netherlands we also know this as "pickles". Vegetables in a jar of sour. In this case white wine vinegar and olive oil with spices. In Italy often eaten as an antipasto or served with a salad. So here in the Netherlands a little less known because we are not necessarily those extensive "eaters".
Our food culture is just different. But we are never too old to learn and with recipes like these I will take you on my culinary journey. A pickles recipe like this Giardiniera recipe is very easy to make. You just need some time for it. The vegetables need to marinate for a few days before eating them. To work!
Classic Italian Giardiniera
This Giardiniera recipe is the classic version, there are more but I'll get to that later with another blog. You can keep this Giardiniera recipe in your fridge for a few weeks. We brine the raw vegetables overnight in cold water. This means you don't have to add any salt to the recipe. Souring vegetables is a thing of the past. For example, there used to be no refrigerators and not many fresh vegetables in the winter. By putting the vegetables in acid, they could be stored for a long time.
In the Netherlands you know of course pickles and pickled onions in acid. So this pickles recipe can be compared with that. All in all you can say that I am a fan of these crunchy vegetables.

Ingredients:
- 80 gram salt
- ½ Cauliflower - cut into small florets
- 1 Red pepper - cut in pieces
- 6 roots - cut into slices
- 3 celery sticks - cut into slices
From the pantry:
- 250 ml olive oil
- 250 ml White wine vinegar
- 4 cloves
- 1 el mustard seed
- 1 tl dried thyme
- 1 tl fennel seeds
- 1 tl coarse peppercorns
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Wash all vegetables and cut them into cubes/slices/small florets.
- Take a bowl and put all the vegetables in it. Top up with water so that everything is submerged. Add the salt. Stir and put this bowl in the fridge overnight. The next day, rinse off the salt water and rinse the vegetables well under cold water. Drain in the colander.
- Sprinkle all the spices in your glass (or preserving jar) and then fill the jar with the vegetables. Press down if necessary, top up with the oil and vinegar and screw on the lid. Shake well and then put in the fridge.
- Let it marinate for at least 2 days before eating. In this way, your Giardiniera can be stored in the refrigerator for 2 to 3 weeks.
