This soup is not exactly my recipe. In fact: not at all! BUT it was prepared in my kitchen and in my pans. And that is why it really cannot be missing from my site. Luuk came to eat Christmas dinner with me and of course he dove into my kitchen to cook this delicious intermediate course. And this is how you make the celeriac soup with prawns:
-We first start with the celeriac, you remove the outer layer and cut off a piece of about 50 grams. Cut the rest of the celeriac into cubes of about 2 cm by 2 cm.
-Take a large pan and add the almond milk, bring it to the boil and then add the cubes. Let it cook for 30 minutes until the cubes are completely soft.
-In the meantime, we take the 50 gram block and cut it into very fine cubes. Take a frying pan and put a tablespoon of butter in it. Then fry the cubes on medium to low heat until they are a nice golden brown. You can season them with a little pepper.
The prawn and the samphire

-In another frying pan, fry the prawns until they are nice and light pink and cooked through. Set aside until use, then fry the samphire for a few minutes.
-When the celeriac cubes in the pan are completely soft, grab a stick blender and puree the whole into a smooth soup. If the soup is still too thick, add some water. Season with salt and pepper.
Celeriac soup with prawns
Finally, grab the bowls and ladle the soup into them first. Then garnish the soup with the samphire, the prawns and some freshly ground pepper. Carefully spoon some of the tasty celeriac cubes in butter into each bowl. And after that I can only say: Delicious Happen!
