She gives very nice workshops and has a website full of Greek classics. And I had to choose one, and what else than this “Koulouria Thessalonikis Greek sesame bread” !! It was meant to be. It is a very nice basic recipe that can not fail. But be careful because these breads are addictively delicious.

Koulourakia are traditional Greek cookies usually made around Easter. They are made from a dough of flour, sugar, butter and eggs, and they are usually shaped into various shapes, such as garlands or figures, and sprinkled with sesame seeds or glazed with a icing sugar. Koulourakia are not only tasty, but they also have symbolic meaning and are associated with the story of the resurrection of Jesus. They are an important part of the Easter tradition in Greece and are often shared during family gatherings and religious celebrations.

This koulouria Thessalonikis recipe is super easy to make. You only need a few ingredients. And if you look at the cost, it is also very cheap. The most expensive are actually the sesame seeds. With this Koulouria Thessalonikis Greek sesame bread, I also secretly made a few buns with black sesame seeds for a kind of Dalmatian effect.

Ingredients:
- 500 gram flower
- 14 gram dry yeast - ( 2 bags )
- 2 tl salt
- 5 tl sugar
- 300 ml lukewarm water
To dip the dough rings:
- ½ ltr lukewarm water
- 3 el sugar
- 150 gram sesame seeds
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- In a dough machine, first mix 300 ml of lukewarm water with the yeast, sugar and salt. Then add the flour. Mix it first for 5 minutes on the low setting and then on a slightly higher setting until a nice dough has been formed. Let the dough rest in a bowl lined with plastic wrap. Let it rise for an hour.
- Preheat your oven to 180 degrees.
- Divide your dough into balls of about 70 grams. You can make about 20 balls from the dough. Then grease your (clean) countertop with some sunflower oil. You do this so that the dough does not stick to the counter. Place a sheet of baking paper on a baking pan.
- In a bowl, mix liter of lukewarm water with 3 tablespoons of sugar. Fill another bowl with the sesame seeds.
- Take a ball and turn it into an elongated sausage. Knead the ends together so that you get a nice round. First dip this round in the bowl of sugar water and then dip it through the sesame seeds. Then place the koulouri on the baking tray.
- 5 koulouri fit on my baking pan. Then bake them in the oven at 180 degrees. This for about 20 minutes until they have a nice golden yellow color.
- Serve with a cup of coffee and some butter.
