Herb quiche with buffalo ricotta
So you can eat violets very well. If you buy the seeds yourself, you can sow them in June-August for the following year. Then you have unsprayed flowers that can serve very nicely as decoration on a quiche like this. They self seed quite easily. As for the taste? They have a very mild taste and will certainly not dominate.
Violets are not only beautiful to look at, but also healthy to eat. They contain vitamin C and antioxidants that are good for your immune system. You can use the violets fresh or dried in all kinds of dishes, such as salads, soups, desserts and tea. Some violets also have a wonderful scent, such as the March violet (Viola odorata). You can also sugar the pansies and use them as candy or cake decorations. Pansies are therefore a versatile and cheerful addition to your kitchen!
But you can also order them at Crisp. It is and remains a seasonal product. There are always other flowers that you can eat all year round. Take a look at your garden center and you can probably buy a nice breeding box. Who knows, you might even get green fingers.

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 180 degrees.
- Let the puff pastry sheets thaw.
- Take the quiche mold and grease it with some olive oil. Then cover it with the puff pastry sheets. Poke some holes in the bottom.
- Take a large bowl and add the eggs, cheese, ricotta, milk, garlic, grated zest of the lemon and the juice and the finely chopped herbs and mix until smooth.
- Pour it into the quiche mold on the puff pastry and then put it in the oven. Bake in a minute or 40-45. (Poke with a skewer if necessary to see if it is cooked.)
- Let cool slightly and garnish with the flowers.
- Delicious bites!
