Unknown makes unloved…. that is certainly the case for goat meat. When I was asked by Discover the goat to make a nice promo video I immediately said yes. I am already well acquainted with goat cheese, goat dairy and live in a village with a goat farm. For this promo I was allowed to visit a goat farmer and find out how it works in the stables and what they eat, how they live and of course cuddle. My assignment for a recipe was to prepare goat meat. And now that is precisely a piece of meat in the Netherlands that we do not or hardly eat. Quite a challenge to get started with that in the tajin.
Not easy to catch, I thought that goat meat is very normal in Mediterranean cuisine. And also in the North African kitchen, a goat meat recipe is not complicated, but full of flavor! With this recipe we get "spicy goat meat" from the tagine, so we really get a piece of sun on the table. Later in this blog you will read and learn more about this meat and I will tell you where you can buy it.

Spicy goat meat from the tagine
So goat meat… goats are born on every farm. And as nature has determined, they are either males or females. The females are allowed to stay to produce goat's milk. The males, yes they go to Southern Europe. Eating goat meat is quite normal there. A delicacy even! Here in the Netherlands there is little demand for it and that is a shame. In order to give milk, a goat must regularly have a lamb. A normal lactation lasts about a year, then a lamb comes every year. Half of that is a goat.

The goat lambs usually go to a goat fattening farm. That bothers the goat sector. That is why they think about good solutions. For example, long-term milking, where a goat is milked for two to five years without lambing in between. The goat therefore does not produce goats. In addition, they support research and are involved in initiatives that promote the sale of goat meat in the Netherlands. Although we do not consume a lot of goat meat in the Netherlands, it is good to use in the kitchen. The meat is very tender and contains very little fat and a relatively large amount of protein. So we should all prepare a little more goat meat. So be sure to try preparing this spicy goat meat from the tajine.

Ingredients:
- 1'' kg goat meat
- 150 gram dried apricots
- 3 cloves of garlic
- 2 white onions
- 500 ml beef boullion
- 1 citroen
- 4 el flower
- 4 el olive oil
Herbs and spices:
- 2 fresh mint
- 3 bay leaves
- 1 el cumin powder
- 2 el Paprika powder
- 1 el curry powder
- 2 el ras el hanout
- 1 el salt
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Mix all the powders, ras-el-hanout and salt from the list of spices into one mix. Cut the goat meat into pieces of 2 by 2 cm and sprinkle the mix on top. Squeeze the lemon and pour the juice over the meat. Mix well and then let it marinate overnight in the fridge.
- Chop the onions and garlic cloves.
- Heat the tagine and pour in the olive oil. Fry the meat until browned all over. Add the onion and garlic and fry for a few minutes. Then add the flour and this too.
- Deglaze with the stock and add the apricots and bay leaf. Turn the heat to the lowest setting and let the meat simmer for three hours.
- After three hours, scoop the meat out of the tagine and reduce the cooking liquid to a delicious meat sauce. (Add a cornflour paste if necessary to thicken the sauce).
- Return the meat to the tagine, pour over the sauce and garnish with some freshly chopped mint leaves.
- Serve with naan or with, for example, a cous cous salad.
