So a recipe with orzo and tomato is my own variation on a Greek classic. It is a side dish that can be served with other dishes. Basically a kind of Greek tapas. This is what the Greeks call “mezedakia”. And what could be better than tasting many different dishes? But if you just want a tasty vegetarian meal, this spicy Greek tomato risotto with orzo is perfect.

Ingredients:

  • 250 gram barley
  • 1 liter water
  • 1 can of tomato paste
  • 1 bouillon cube - (vegetable or chicken)
  • 2 cloves of garlic - from the press
  • olive oil

Spices:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Take your pan and put a liter of water in it and bring it to a boil. Add the herbs, garlic, and the stock cube. While stirring, add the tomato puree and keep stirring until it has dissolved and you have a spicy tomato stock.
  • Sprinkle in the orzo and keep stirring as it cooks. Do this so that the orzo does not stick to the bottom.
  • Orzo is done in about 11 minutes. Remove the pan from the heat and let it rest for a while. The paste has then absorbed all the moisture.
  • Pour a good splash of olive oil into the pan and stir to combine.
  • Delicious bites!
