I chose to deviate a bit from the classic recipe. We're going to add a little more spice than you're used to. This spicy Dutch pea soup will certainly taste different than you are used to. Spicy Dutch pea soup
Mace are the delicate skins of an aromatic nutmeg ball. These spices have a recognizable, intense scent and, together with bay leaf, juniper berries, pepper and a pinch of chili flakes, can be excellently added to a heart-warming pea soup. As mentioned earlier, this rich soup has significantly more spices than is usually common.
It is this unique combination in particular that distinguishes the dish and gives it an exclusive character. The addition of chili flakes also provides the whole with a pleasant, spicy undertone that not only warms the soup, but also gives it a certain spice. This soup is a true taste experience for lovers of traditional dishes with a surprising twist.
It is essential to let the soup rest for a day for the true taste experience. The flavors become more intense as it rests. The longer it rests, the more the aromas merge. That secret also applies to classics like onion soup. Don't forget: patience and practice is the key to good cooking.

Ingredients:
- 250 gram split peas
- 1 winter carrot - cut into quarters
- 1 celeriac - cut in pieces
- 1 ui - XNUMX onion - shredded
- 1 leeks - cut into rings
- 1 smoked sausage - in slices
- 6 crabs - (pork ribs)
- 3 twigs Parsley - finely chopped
Spices:
- 2 bay leaves
- 6 Juniper berries
- 2 peels mace
- ½ tl chili powder
- peper
- salt

And this is how you make it:
- Clean the vegetables and chop or shred them as described above.
- Put the peas in the pan with the water together with the spare ribs and bring to the boil. Skim off the foam with a slotted spoon. Then leave it on the fire for an hour. Add all spices.
- After that hour, scoop out the crabs and let them cool down. Remove the meat from the bones and finely chop.
- Add all the vegetables, parsley, the meat of the crabs and the smoked sausage to the pan and let it cook for another half hour.
- Remove the bay leaf, juniper berries and mace from the soup. (Put the spices in a bag or a tea egg so you don't have to fish….) Season to taste with salt and pepper if necessary.
- Let cool and put in the fridge overnight.
- Serve with a slice of rye bread.
