Lately I've been seeing cauliflower steaks everywhere and they looked pretty tasty. But there are still more vegetables that lend themselves to delicious baking. And the pumpkin is a good example of that. Hugely increased in popularity and widely available. In this recipe you only use the “neck part” of the butternut squash, which means that you can make a nice soup with the rest that is left over. "Pompkoen" is the Dutch term for "pumpkin" in English. Pumpkins are widely used in the fall, especially around Halloween and Thanksgiving, for decoration and cooking. The most common type of pumpkin is the orange round pumpkin, but there are also other varieties, such as the green kabocha pumpkin and the elongated spaghetti squash. We start with the pumpkin, cut the part from the neck of the pumpkin. So you can save the bottom for another recipe.

Peel the pumpkin with a potato peeler, then cut the pumpkin into thick slices of an inch or two.

Take your frying pan with you, you can also fry them in a grill pan. Heat it up and put some olive oil in it. Fry the steaks and turn them regularly. After about 10 minutes, gently prick them with your knife to see if they are soft.

Clean the garlic cloves and cut them in half. Add them to the pan along with some sprigs of thyme. If you want to give extra flavor to the steaks, you can also use a spicy olive oil. Add the butter to the pan and spoon the butter/olive oil over the pumpkin with a spoon.

Stop as soon as the butter starts to brown. Season the steaks with sea salt and freshly ground pepper. Serve with a tasty green salad.
