There was no pilav recipe on my website yet. Which is of course a shame because it is very tasty. And easy to make too! This spicy vegetarian mushroom pilaf has plenty of flavor. That's because of the spices, but also because of the saffron. It has a very recognizable and clear taste. One likes it the other doesn't that's personal. So we make the pilav rice with this seasoning. Mushrooms are healthy
It also gives a nice light orange color to the rice. This is because the threads give off color to the water. The mushrooms give this dish a nice autumnal touch. This pilaf is completely vegetarian, but you may know it from the version with chicken.
Spicy vegetarian mushroom pilav
A pilaf recipe where does it come from? It is a dish from Middle Eastern cuisine. Persia, India, Central Asia this region has several recipes. We make the pilav rice by frying the rice in oil. It's a bit like making risotto. That's where you first fry the rice before adding moisture. This spicy vegetarian mushroom pilav can even be called vegan.
We only use vegetable products. And that fits perfectly in a varied diet. The mushrooms provide protein and some bite to this dish. The saffron gives it an extra spicy taste. Make sure you buy good saffron. This is a bit pricey but gives a beautiful color and taste to your dishes.

Ingredients:
- 125 gram basmati rice - (from e.g. Tilda)
- 1 bowl of mixed mushrooms - 400 gram
- 1 clove of garlic
- 1 white onion
from the pantry:
- olive oil
- 3 cardamom pods
- 3 bay leaves
- 1 cinnamon stick
- 5 cloves
- salt
- 10 threads of saffron
- 3 tablespoons slivered almonds
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Wash the rice in cold water until the water runs clear, then drain in a colander.
- Cut the mushrooms into slices.
- Take your frying pan and add a splash of olive oil. Let it get warm on low heat. Add the cardamom pods, bay leaf, cinnamon, and cloves. Let these fry for a few minutes on low heat so that they give off their flavor to the oil. Then take them out of the pan.
- Cut the onion in half and then into thin slices. Add half of this to the skillet with the mushrooms. Chop the garlic and add it too.
- Add the rice to the frying pan and fry until the rice is coated with oil all over. Season with salt.
- Now add 250 ml of water and bring to the boil. Let it cook on high heat for 5 minutes. Stir the saffron into the pan and put the lid on the pan. Let it simmer for a few more minutes and then turn off the heat. With the lid on the pan, let the rice rest for about 10 minutes. The granules absorb all the moisture.
- In another small frying pan, fry the rest of the onion until golden.
- Place the pilaf in a bowl and finish with the fried onion and almond shavings.
