Today is Monday and that means: shopping! But in the fridge there is still half a bunch of carrots and a big head of broccoli from last week that just didn't make it in a recipe. Thinking about what I'm going to do with it because we don't throw that away here! You can actually use all your forgotten or loose vegetables from your fridge in a soup. This Spicy Carrot Broccoli Soup is easy to make and is packed with flavor. I first pre-grill the carrots in the oven, with some cloves of garlic and a teaspoon of ras-el-hanout herbs. This gives a nice spicy taste to the soup! The grilled carrots add a delicious depth to the flavor of the soup, while the garlic and ras-el-hanout herbs provide an extra kick. The broccoli adds a soft texture and makes the soup even tastier. This is a perfect soup for a cold day or when you just fancy something warm and nutritious.
And this is how you make the Spicy Carrot Broccoli Soup:
- First preheat your oven to 200 degrees
-Wash the vegetables and grate the carrots and chop them into small pieces, then put them in an oven dish. Sprinkle the teaspoon of ras-el-hanout over this. Chop the 3 garlic cloves and add these too. Pour a little olive oil over it and toss well, put in the oven for about 20 minutes.
- Cut the broccoli and chop the onion.
-In a large stockpot, put a little olive oil and briefly sauté the onion. Then add the boullion cubes and pour in a liter of water.
Then bring to the boil and add the broccoli. Boil it gently for about 10 minutes. Now your carrots are ready. Remove them from the oven and carefully spoon them into the stock pot, bring them to the boil again and let them simmer for a while.
-Take your hand blender and mix it all into a nice smooth soup, season with salt and pepper if necessary.
Grab your soup bowls and pour in the spicy carrot-broccoli soup, pour a little bit of coconut milk on the soup and serve it with a nice glass of fresh white wine.
