Kruidnootjes meringue, Sinterklaas in the country

Yay! The Saint is back in the country. Wish lists, gingerbread chunks and making your own spice nuts. All fun and tasty activities around the beginning of December. And because meringues are also very much part of this period, I thought I'd combine these two. A delicious homemade gingerbread meringue. Unfortunately, it is not entirely possible to find out exactly where the word meringue comes from or who exactly was the first pastry chef to make meringue. The word first appeared in 1692 in the French cookbook by Francois Massialot. This chef worked for several royal houses and wrote several cookbooks. get started with this meringue recipe.

-Since making the meringue and the kruidnoten takes quite some time, you could bake the nuts one day and the meringues the next. If you have all the time, it is of course also possible on the same day.

-We're going to make the spice nuts first. Preheat your oven to 160 degrees. Then grab a bowl and put all the ingredients for the spice nuts in it except the milk. Knead everything together well and finally add the milk spoon by spoon. Knead the whole into a ball and then take off small pieces that you roll into small balls the size of a small marble.

- Cover a baking tin with baking paper and place the balls on it. Then put them in the oven for 15 minutes and let them cool well when they are ready.

To make the meringues:

-Make sure that the material in and with which you are going to whip the egg white is completely free of fat. You can wipe the bowl and the whisk or beater with lemon juice.

- Take the bowl and split the eggs, we only need 2 egg whites. Beat these until they are fairly beaten. Then add the sugars while mixing. Just let it slide gently into the bowl while you keep mixing. When you have really nice peaks and they stay upright, the foam is good.

- Turn the oven on to 90 degrees and line a baking tray with baking paper. Scoop the egg whites into a piping bag.

- Pipe the egg whites into a nice circle on the baking paper, then sprinkle some crumbling kruidnoten on it. Then spray another layer of foam on top, finally sprinkle some crumbs on the meringue.

-Place in the oven for at least two hours. When the egg whites are dry, turn off the oven and let them cool in the oven. You can open the door a crack.

Ingredients:

For the meringue

  • 50 gram light brown sugar
  • 2 eggs - split only the egg whites!
  • 50 gram powdered sugar

For the spice nuts you need:

  • 75 gram butter
  • 62 gram Brown sugar
  • 3 el gingerbread spices
  • 125 gram self-raising flour
  • 1 knife point salt
  • 2 el semi-skimmed milk

And this is how you make it:

  • First make the spice nuts: We will first preheat the oven to 160 degrees. Prepare the baking tins with a sheet of baking paper on them. Also add the caster sugar, the pinch of salt, the gingerbread spices and the self-raising flour. Knead the whole thing into a dough. Finally, add the spoonfuls of milk one by one. Make a big ball of dough. Remove small pieces and roll into balls. Put the baking tin in the oven for 15 minutes and when they are ready let them cool down for a while.
