Ingredients:
- 1,5 kg Leg of lamb - boneless and butterfly

And this is how you make it:
- We first make the salsa so that the flavors can infuse well. Chop/slice/shred the tomato, shallot, garlic, parsley, mint, and basil. Add the capers.
- Season the lamb with salt and pepper and rub well.
- Mix the olive oil and lemon juice into the salsa and mix well. Season with salt and pepper. Leave in the fridge until use.
- Light the bbq and when the flames are extinguished push the coals a little to the side with tongs. Place a dripping pan in the middle of the BBQ over a layer of coals so that the fat from the lamb can be collected.
- Place the leg of lamb on the grid and grill it on both sides, you want the core temperature at about 60 degrees. Use a core temperature thermometer for this.
- When the meat is cooked, remove it from the BBQ and place it on a platter. Spoon the salsa over the meat and cover loosely with aluminum foil. Let it rest for a while before slicing.
- Serve with some fresh mint leaves, basil and parsley.
