If there's one time you can pat yourself on the back, it's now! This mocktail is definitely my favorite from now on. It does take some work to make the foam, but if you make a large amount you can also store it in the refrigerator for a day or two. The combination of the slightly sour drink combined with the sweetness of the meringue is heavenly. Burning the foam briefly also gives your drink something extra. This lemon meringue martini mocktail will definitely become your favorite!

To make the foam you will need some kitchen equipment such as a stand mixer, a candy thermometer, and a piping bag. I had never made the meringue foam in this way before, with hot sugar syrup. The French method, but you usually use it if you want to make foam or Pavlovas. The hot sugar syrup is added to the whipped egg whites, creating this lovely sweet foam that you can burn off with a blow torch.

Ingredients:
- 300 ml Martini floreale - 0,0%
- 1 citroen - squeezed
For the meringue:
- 100 gram protein
- 37 gram powdered sugar
- 165 gram granulated sugar
- 42 ml water
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- We first make the meringue, take a saucepan and add the water and granulated sugar, place the candy thermometer in the saucepan and bring to the boil. DO NOT STIR, bring to a boil until it reaches 121 degrees.
- In your stand mixer, beat the egg white until stiff and add the powdered sugar, let it stand until your sugar syrup is at 121 degrees.
- Carefully pour the hot syrup into the egg white in a running stream and put it on the highest setting of your mixer and beat until you have nice stiff peaks.
- Pour the Martini into a shaker with the lemon juice and some ice cubes and shake hard, then pour into the glasses.
- Place the meringue foam in a piping bag and pipe a nice layer on your mocktail and burn the top layer with a gas burner.

This mocktail is really fantastic, but of course I have many more! Whether you want it with or without a foam layer, and with or without alcohol. It's all possible, fresh and fruity, let that summer come, here we shake them out of the shaker.
