This recipe is a delicious way to enjoy low-carb Mexican cuisine. Instead of tortillas we use zucchini to make the rolls. -First we peel and chop the onion, then the beef tomato, which we cut into small pieces. Put a little olive oil in a frying pan and add the onion and tomato and fry for a while. Then add the beans and corn and fry until the moisture has evaporated. Season with the Mexican spice mix.
-Take in the washed courgettes and use a cheese slicer to slice thin slices of courgette. You can also do this with a mandolin, but watch out for your fingers…
