This recipe is a delicious way to enjoy low-carb Mexican cuisine. Instead of tortillas we use zucchini to make the rolls. These rolls are filled with chipolata sausages, which you can also omit if you are vegetarian. In addition, we also add tasty beans and a creamy sauce of tomatoes, cheese and herbs. -First we peel and chop the onion, then the beef tomato, which we cut into small pieces. Put a little olive oil in a frying pan and add the onion and tomato and fry for a while. Then add the beans and corn and fry until the moisture has evaporated. Season with the Mexican spice mix.

-Take in the washed courgettes and use a cheese slicer to slice thin slices of courgette. You can also do this with a mandolin, but watch out for your fingers…
