A good salad is not possible without a good dressing! So almost sacred to me. And all that sadness that you find on the shelves in the supermarket: leave it alone and just make it yourself. It takes less than 5 minutes and it adds so much flavor to your salad. This also applies to this loaded macaroni salad with chicken. Why loaded? Because it is very well filled with lots of fresh vegetables and is therefore marinated in a delicious homemade dressing! Macaroni salad served cold is also very tasty!

And this is how you make the Loaded macaroni salad with chicken:
- Cut the two bell peppers, the onion and the celery stalks into fine cubes/pieces. Take a large bowl and put all the vegetables in it.
-Bring a pan with water to the boil and cook the eggs, not completely hard-boiled but not too soft that the egg yolk is very hard.
-Take another bowl and add all the dressing ingredients. Beat it all to a nice smooth dressing. Put these in the bowl with the vegetables and mix well.
-Cook the macaroni until al dente, don't let it get too soft here either, because it will be too snotty.

-Finally add the eggs and macaroni to the bowl and mix again until there is a nice layer of dressing everywhere. If necessary, leave it in the refrigerator overnight to allow all the flavors to fully develop. Serve with a nice piece of baguette.
