And the dough with which we fill this nut pie is low in carbohydrates. Don't immediately eat the very low carb almond flour nut cake, I understand if you do want to, but even with this kind of baking it is and remains a treat.

Oh that sugar, we are all addicted to it and what is it in many products! Also this cake is therefore not completely without sugar. In the end it remains a treat and you can eat a piece every now and then. Very tempting to grab another piece afterwards, but you just shouldn't do that.
You can store this low carb almond flour nut cake wrapped in foil in the fridge for a few days. Or do like me and hand out some to the neighbors. Make it an “act of random kindness” and surprise with this delicious treat with a cup of coffee.

Ingredients:
- 250 gram almond flour
- 2 tablespoons agave syrup
- 3 tablespoons coconut oil
- 1 ei
- ½ tl sea salt
For the contents of the cake
- 75 gram coconut sugar
- 150 ml agave syrup
- 1 tablespoon cornstarch
- 3 eggs
- 1 tablespoon coconut oil
- 100 gram pecan nuts
- 100 gram amandelen
- ½ tablespoon sea salt

- 6 blackberries
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 180 degrees
- For the dough, mix the top ingredients in a bowl to form a dough ball. This one feels a bit squishy. Take your cake mold with it. Butter the edges. Choose one that you can press the bottom of, so that the cake will come out easily. Press the dough neatly over the entire bottom and edges with your fingers.
- Chop the nuts finely and mix them in a bowl.
- Add the rest of the ingredients for the filling, except the sea salt, which we sprinkle on top.
- Beat everything together well with a spoon until you have a light foamy mass, and everything is really well mixed together.
- Scoop the nut mix into the dough with a large spoon. I had some liquid left over and have not used it further. So it also depends a bit on the size of your shape whether everything fits in it. Sprinkle the sea salt on top, and push the blackberries in between them a bit.
- Bake the cake in the oven for 35 minutes, if it gets too dark to your liking you can cover it with some baking paper while baking. After baking, let it cool and then gently push it out of the mold from below with your fingers.
