Before making this sushi salmon avocado I was a bit nervous. How did that come about? Well we have a permanent sushi address and they are always very tasty there. Sushi is also popular for its healthy properties, as it often contains raw fish rich in omega-3 fatty acids and other nutrients.
Low carb avocado salmon sushi
Low calorie sushi? sushi calories. But how can you call this low-carb? Because in the picture you can really see that I also made sushi rice. That's because I used half/half sushi rice and cauliflower rice. Nowadays, the fresh food section of your supermarket often contains bags of broccoli and, for example, cauliflower rice. Simply grind vegetables into very fine pieces that can then be used as rice.
In this recipe low carb avocado salmon sushi we mix the delicious sticky sushi rice with the cauliflower rice. This way the whole will stick, but you will eat half the carbohydrates. My husband hardly noticed the difference and you can vary endlessly with the content of your sushi. I will definitely try to make an inside-out roll with it. Then the rice is on the outside of the roll, which you roll in the sesame seeds, for example. I think it's "sticky" enough to make it that way.

Ingredients:
- 250 gr Sushi rice
- 300 gr cauliflower Rice
- 400 gr smoked salmon
- 1 cucumber
- 1 avocado
- 1 citroen
- rice vinegar
- nori sheets
- soy sauce

And this is how you make it:
- Cook the sushi rice in a pan exactly as indicated on the package.
- In another pan, cook the cauliflower rice for a few minutes, then drain well in a colander. When the sushi rice is ready, add the cauliflower rice and stir well so that it is well mixed.
- Peel and pit the avocado and mash in a bowl with the juice of half a lemon. Cut the cucumber into strips.
- Place the nori sheet on the mat and divide the rice over the sheet. Place the smoked salmon on top, spread horizontally with the avocado and place a piece of cucumber in the middle.
- Carefully but very tightly roll up the sushi roll.
- Cut the roll into slices with a super sharp knife. I took 6 out of a roll. Serve with some soy sauce.
