Ingredients:
- 150 gr blueberries
- 175 gr almond flour
- 75 gr Zusto (sugar substitute)
- 3 el shredded coconut
- 2 tl baking powder
- 1 tl cinnamon powder
For the wet ingredients:
- 5 medium eggs
- 1 tl vanilla essence
- 60 gr butter
- 4 el undefeated whipped cream
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 175 degrees.
- Grab your food processor and add all the wet ingredients. Mix it all until smooth.
- Add all dry ingredients to the mix in the food processor and blend into a smooth batter. Remove the bowl from your device and add the blueberries and mix them through the batter.
- Grease your bundt molds with some butter and scoop the batter into the molds with a spoon.
- Place the tin in the oven and bake for about 25 minutes until the batter is golden brown. You can check by inserting a skewer. If it comes out dry then they are good.
- Allow to cool slightly before shaking them out of the mold.
