Since low carb has become a lifestyle here, it appears that a number of dishes do not belong there at all, while they are still very tasty. Well I have to say that we don't eat fried rice here at home on a regular basis, but every now and then it is quite tasty! Looking for a nice low carb cauliflower nasi. And it turned out not to be that complicated at all. The answer is in cauliflower! By the way, just to show how delicious that is, the first time I made this I didn't tell my husband that I had used this. Only after dinner did I ask him if it really tasted different? yes the Cauliflower is slightly softer than real grains of rice, but otherwise he thought it tasted very good and should definitely be on the table more often!

Some fun facts about nasi goreng. It comes from Indonesia, nasi means boiled rice, and goreng means fried. So it is fried boiled rice. In Indonesia it is a national dish and you can even have it served for breakfast! So here we just eat it for dinner. In this case I used chicken thighs and seasoned them with fried rice. Add a little fragrant wok oil and let it marinate in the fridge for at least 24 hours, and you can taste that too!

Incidentally, this is a dish that you can vary enormously with because you can really use all kinds of different vegetables, but also other types of herbs. Make your own peanut sauce and sprinkle some coconut over it. A delicious meal that is also ready quite quickly because apart from marinating the meat, it can be on the table in less than half an hour.

Ingredients:
- 400 gr chicken thigh - in cubes
- 1 bag nasi herbs
- 400 gr cauliflower Rice
- 4 eggs
- 1 rode p
- 2 toes Garlic - chopped
- 3 spring onions - cut in rings
- 1 big white onion
- wok oil
To finish the board:
- Spanish / chili pepper
- coconut chips
- Sweet and sour Cucumber
- atjar
- peanut butter
- bean sprouts

And this is how you make it:
- Season the chicken thigh with the nasi herbs and put in a bowl with some wok oil and let it stand overnight in the fridge.
- Cut the bell pepper into cubes, finely chop the garlic and onion, and slice the spring onions.
- Take the wok and add some oil, fry the garlic and onion until translucent and then add the chicken. Stir fry until the chicken is almost cooked. Add the bell pepper and cauliflower and cook for another 5 minutes.
- Meanwhile, fry the eggs in a frying pan. If you want to use a nice round like I do, use those rings.
- Spoon the fried rice on the plates and finish with a variation of the ingredients to finish the plate, or just all that is possible!
