A low carb broccoli cheddar casserole is the good choice for those looking for a nutritious and low-carb meal. You have complete freedom in how much of each ingredient you add, although it is advisable not to sprinkle too liberally. We deliberately leave out pasta or potatoes from this dish, and surprisingly you won't miss it. This generously filled dish is packed with flavor in itself, thanks to the combination of broccoli, melting cheddar and other delicious herbs. Delicious for a cozy family dinner or as a warming meal on a cold evening.
Low carb broccoli cheddar casserole
You can vary the herbs in this broccoli casserole. I used the Italian spice mix, but you can also use my persillade spice mix, or greek spice mix. The cheddar cheese used melts well, but here too you are of course free to use other types of cheese. Try this oven dish with cauliflower, zucchini or bell pepper. You already read, the possibilities are endless. If you don't eat low-carb, you could mix cooked macaroni or boiled potatoes through the dish.

- 450 gram broccoli - blanched
- 350 gram chicken breast - in cubes
- 2 white onions - XNUMX onion - shredded
- 100 gram smoked bacon - in cubes
- 50 gram monchou
- 6 el cooking cream
- 200 gram grated cheddar cheese
Herbs / Spices / Pantry:
- 1 el dried chili flakes
- 2 el Italian spice mix
- 2 el chicken seasoning
- peper
- salt
- 3 el olive oil
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Wash the broccoli and cut small florets off the stems. (You can use the leftover stumps for a soup, for example).
- Season the chicken with the chicken spices and the Italian spice mix. You can do this the night before to really marinate the chicken.
- Preheat your oven to 200 degrees.
- Place a pan with plenty of water on the stove and bring to the boil. Blanch the broccoli florets for 3 to 4 minutes. Then drain in a colander.
- In a frying pan, fry the chicken in the olive oil until golden brown. Remove from the pan and spoon into your baking dish.
- In the frying pan fry the chopped onion until translucent and add the bacon. Bake until crispy and then spoon into the baking dish with the chicken.
- Divide the broccoli over the dish and sprinkle with the chili flakes, the cheddar and, if desired, some salt and pepper.
- In a bowl or measuring cup, beat the monchou and cream until you have a smooth mix. Pour this evenly over the baking dish.
- Place the dish in the oven and let the cheddar melt. (minute or 10-15)
