Before I wrote this recipe for a low carb vegetable casserole with cheese and cauliflower rice, I made and tested it myself several times. The result is impressive, because the dish has certainly been approved at our house. The combination of the tasty vegetables, creamy cheese and light cauliflower rice make this dish a delicious and healthy choice. I am sure you and your guests will enjoy it as much as we do.

Taking food photos is generally not that difficult in my garden. I have quite a few nice corners that I use regularly. Outside, the garden, not using too many props, that's kind of my style. You still have to be careful when you photograph at a low altitude, especially if Lilly the beagle is also in the garden. Because everything at eye level for Madame is fair game, at least that's what she thinks!
So I was just able to save my bowl when this very curious lady walked into my set and thought I could grab a bite from this low carb vegetable casserole with cheese. Now she always gets a bite when we eat, but she can't come and take it herself….

Ingredients:
- 200 gr chicken thigh
- 1 small broccoli
- 1 zucchini
- 1 witte ui
- 200 gr cauliflower Rice
- cheddar cheese - grated
- Gruyere cheese - grated
- 2 el Persillade (spice mix)
- 1 ei knocked loose
- 3 el sour cream
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cut the chicken thigh fillets into cubes. Place in a bowl and season with the persillade. Add a little olive oil.
- Chop the broccoli into small florets. Also cut the zucchini into cubes. Chop the onion, add all this to the chicken thigh and then add the cauliflower rice.
- Beat the egg with the sour cream in a measuring cup. Add a little salt and pepper.
- Pour this mix over the vegetable/meat mix in the dish.
- Sprinkle with the grated cheeses. Do this a little by feel, some like more cheese than others. Sprinkle with a little more persillade and then it can go into the oven.
- Bake for 30 minutes at 200 degrees. Remove from the oven and serve with a nice salad.
