When I used to live in the big city, and we are really talking about twenty years ago, a whole new world opened up for me. From a small village to the big city with all the freedom that that entailed. Nice lunch outside the door in nice tents that you certainly did not find in our village. And so is the discovery of the bagel! A typical sandwich that lends itself to be spread with all kinds of tasty butters and, for example, salmon. In my search for a healthier lifestyle, I came across a low carb version on Pinterest. Curious if they would also taste good, I started working with them. And I can tell you that this low carb herb cream cheese bagel recipe passed the inspection, even my husband really liked it!

A little history about the real bagel: it is originally a Polish sandwich. Taken by Jewish immigrants to primarily New York in the beginning. The reason for the immigration should be obvious. Because Jews have their rest day on a different day, these sandwiches were available fresh on Sundays. Because the rest of the shops and bakeries were closed on Sundays. And that opened the door for the wide distribution of these fine sandwiches. Meanwhile, the most famous bagel is the New York bagel that is topped with cream cheese and salmon as in this recipe.

The bagel has been associated with Ashkenazi Jews for centuries since the 17th century; they were first mentioned in 1610 in Jewish community ordinances in Krakow, Poland. The name bagel comes from the Yiddish word beygl, which is derived from the German dialect word bracket, meaning "ring" or "bracelet."1. The bagel has a characteristic ring shape that is made by hand from leavened wheat dough that is first briefly boiled in water and then baked. The result is a dense, chewy, doughy interior with a brown and sometimes crispy exterior. Bagels are often sprinkled with seeds that are baked onto the outer crust – traditional choices are poppy seeds and sesame seeds – or with grains of salt. The bagel is now a popular bread product in North America and Poland, especially in cities with large Jewish populations1.

Ingredients:
- 150 gr grated mozzarella
- 150 gr almond flour finely ground
- 50 gr cream cheese
- 1 el baking powder
- 1 ei scrambled
- white and black sesame seeds
- fresh herbs such as basil, chives, parsley
- 100 gr cream cheese
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 190 degrees.
- Take a bowl and add the grated mozzarella. Also add the 50 g cream cheese. (I used Philedelphia) Put in the microwave at 700W for 30 sec and then stir. Then put in the microwave again for 30 seconds and stir again.
- Now add the almond flour and baking powder and mix it with the melted cheese cream cheese.
- Add the beaten egg and mix well with a spoon. Then knead it with your hands into a smooth dough. (Can be a bit sticky).
- Divide the dough into 6 equal pieces and roll each piece into a kind of sausage. Fold the sausage into a bagel shape.
- Dip the bagels in a mix of white and black sesame seeds and place on a baking tray lined with baking paper.
- Bake them for about 15 minutes until golden brown.
- While the bagels are baking we make the herb cream cheese. Finely chop all fresh herbs. Take a bowl and add the 100 grams of cream cheese. Sprinkle in the herbs and season with some fresh pepper, salt and, for example, some garlic powder. Mix well and refrigerate until ready to use.
- Remove these bagels from the oven and let them cool slightly. Then cut them in the middle and spread with the herb cream cheese and top with some smoked salmon.
