Although this low carb taco casserole contains few carbs, it is really not a light meal! Sour cream, a good amount of cheddar cheese, minced meat, taco sauce… Afterwards I wonder why I didn't just serve tortilla chips with it. But maybe it's better not to have done it. However, this is a very tasty Tex-Mex dish that is quite easy to make. An ideal dish for the weekend, enjoying this guilty pleasure on Saturday evening. I secretly added a lot of extra vegetables, you can read that in the recipe card below. recipe taco casserole ground beef
Low carb taco casserole
Tex-Mex is the description for Texan-Mexican cuisine. Mexico borders the state of Texas in the United States. And what happens in more countries: in the border area you often get dishes that contain the best of both worlds. In general, it is quite a spicy kitchen, and they are not afraid to sprinkle with a lot of herbs. Certainly the different types of peppers such as the jalpēno peppers. I myself do a little less well on that very spicy food.
In my cooking style I am liberal with various spices, but I have a cautious policy when it comes to the use of peppers. Coriander is also an ingredient that doesn't make it into my kitchen; I don't like the soapy taste. I always choose parsley as a tasty alternative. It's just as delicious and comes without that strange tang. With this in mind, it turns out that with a little creativity and adjustment you can bend almost any culinary tradition to suit your own taste palette and prepare something delicious. Ultimately, cooking is about personalizing and enjoying.
Here you will find the complete recipe with all the ingredients you need. I hope you have fun preparing the dish below.

And this is how you make it:
- Peel the onions and chop them finely. Cut the bell pepper into small cubes. Drain the corn.
- Take a large frying pan and put some oil in it. If you like garlic like I do, add 3 extra finely chopped garlic cloves. Put them in the frying pan with the onion and fry them until translucent. Add the tomato paste and fry it.
- Take the minced meat and add it to the frying pan, stir in the minced meat. Now you can also add the bell pepper, corn and the cauliflower rice. Shake in the bag of herbs and mix well with the minced meat-vegetable mixture.
- Take the ramekins and put a layer in the ramekins. Cover with a generous layer of cheddar cheese and place in the oven. (Preheat to 200 degrees)
- When the cheese has melted nicely, remove the ramekins from the oven. Spread a layer of taco sauce and a layer of sour cream on top and cover with the fresh toppings. You can chop and cut these while the dishes are in the oven.
- Finally, sprinkle some cheese and fresh parsley on top and serve.
- Delicious bites!
