May is the month of milestones: milestone. If you know me a little better, you know I'm a fan of puns. Now, of course, I found this milestone again. I can also laugh enormously, with a drink, at the book Alphabet Better. Anyway, now back to the milestones in May. For me, the month of May was full of milestones: the catering industry finally opened again, my first e-book went live and for the first time in a long time I finally went on holiday again. But before I left I baked a very nice airy apricot almond cake. As you are used to from me, this almond cake recipe is very easy to make, for example together with your kids.
The last milestone was that I am finally on vacation again. I am writing this blog from Ibiza. I hadn't been here in about three years. When it became known that the island was put back on code yellow, I quickly booked a flight and accommodation.

How wonderful it is to be in a different environment again. They are a bit further here with relaxation than in the Netherlands, so you just step in somewhere and sit down and enjoy. It almost doesn't feel real. There are beautiful bays and, above all, a lot of good food.
Healthy food is no problem here. So I can indulge myself here. Just before I left, I baked a nice airy almond apricot cake. Quickly check the recipe below. From Ibiza I say see you next!

Ingredients:
- 150 gram almond flour
- 100 gram oatmeal
- 250 gram Greek yoghurt
- 3 eggs
- 1 tl vanilla extract
- 2 tl baking powder
- 6 apricots
- 2 el slivered almonds
- 2 el apricot jam - optional
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat the oven to 180 degrees.
- Separate the eggs and beat the egg whites with the vanilla extract in a grease-free bowl.
- In another bowl, mix the yogurt with the egg yolk and optionally the apricot jam. Add the almond flour, oat flour and baking powder and mix into a firm mixture.
- Meanwhile cut and pit the six apricots into pieces and cut into halves.
- When the egg whites are stiff, gently fold the batter into the egg whites. Do this as gently as possible so that the mixture does not lose air.
- Spoon the batter into a baking tray lined with baking paper and place the apricot halves over the batter. Top with almond shavings and put the cake in the oven for 35-40 minutes.
