Airy brown walnut butter

Estimated reading time: 4 minutes

We recently baked a delicious soda bread for Christmas dinner. But dry bread is just dry bread, right? We Dutch think it is very nice to spread a little butter on it. You will not come across this very often when you go abroad. In France, Spain and Italy you sometimes get some olive oil, but that's about it. Well, you can keep spreading this airy brown walnut butter…. Truly one of the best butters I've tasted. All thanks to Martijn Kajuiter, because this is recipe number 2 that I made with him in my kitchen. brown butter

Of course this butter is also very tasty on a snack board. You can make it well in advance and keep it in the fridge. So don't stress on Christmas itself, you can shape them into "canelles" like we did. But also just put it on a butter dish or in a bowl. Take it out of the fridge a little in advance so that it spreads a bit easier!

However, you have to be careful when making the butter, because the butter can also become too brown in the pan and that is of course not the intention! It is and remains a matter of personal taste, so it is important to keep a close eye on the butter during the preparation process.

Remember, the end result of your efforts will be a delicious, golden brown butter that is the perfect accompaniment to your favorite dishes. This butter, with its rich flavors and aromas, can be used to create a variety of culinary masterpieces. Think spreading it on freshly baked bread, adding it to a creamy sauce, or using it as the base for a carefully prepared dish. Not only is preparing this butter an exciting experience in the kitchen, it can also be a great way to impress friends and family with your Bruineboter cooking skills.

You need:

steel bowl

Ingredients:

  • 250 gram salted butter - Irish KerryGold for example
  • 30 ml Sherry vinegar
  • sea salt
  • 6 walnuts
  • 6 dried cranberries

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Melt the butter in a saucepan and let it gradually bubble over medium heat and turn walnut brown, then remove from heat.
  • Extinguish the butter with vinegar, watch out it can catch fire!
  • Fill a large bowl with ice, put another bowl in there and pour in the butter. With a whisk you "beat" the butter cold.
  • The butter will now cool and become nicely creamy and airy.
  • Make a "quenelle" of the butter with two spoons or fill butter jars with it.
  • Before serving, sprinkle with some sea salt crystals and finish with chopped walnuts and cranberries.
  • Delicious bites!
