Luxury mushroom soup
In the run-up to the holidays, it is busy here at home with tasting, collecting, and also testing recipes for Christmas. The warm taste of the port is also part of it as far as I'm concerned. For one pan of Luxurious Mushroom Soup you will need:
one bowl of luxury mushrooms
1 large shallot
a piece of leek
Red port
boter
500 ml vegetable stock (from tablet)
1 jar of game stock
fresh thyme
pepper and salt
grated parmesan cheese
little bit of persillade
fresh thyme
And this is how you make the Luxe mushroom soup:
-We start with the vegetables first, clean the shallot and cut into thin rings. Cut the mushrooms into slices, the small mushrooms can be left whole. Cut the leek into rings, you need about 10 centimeters.
- Take a stockpot and put a knob of butter in it and let it melt, then add the shallot and let it become translucent. Then add the leek and mushrooms and fry for a while, deglaze with a good dash of red port.
-Now finally add the 500 ml vegetable stock and the pot of game stock and gently stir everything together. Season with salt, pepper and two sprigs of fresh thyme. Let the soup cook slowly over low heat.
-Preheat your oven to 200 degrees and take a baking tray lined with baking paper. Grate some parmesan cheese and place a few heaps well apart on the baking paper. Then put in the oven to make tuiles! Small cheese biscuits that you can serve with the soup. I also sprinkled some persillade on top for flavor and it looks festive.

Finally, take out your best crockery and ladle the soup into it, garnish with a sprig of thyme and the tuiles and serve with a nice red wine.
