Luxury salad with burrata
After my visit to Suus from Suzies Cheesestories, she gave me a cheese box to take home. She put some very tasty cheeses in here that I could use to make a number of recipes. I was very happy with this gift, because I love cheese and I like to experiment in the kitchen. And now the first recipe of these delicious cheeses! I started with the burrata balsamic salad.
Burrata is a special cheese that is very similar to mozzarella, but even creamier and softer. The burrata originated in the Puglia region of Italy, where it is traditionally made from buffalo milk. The name burrata means "buttery" in Italian, which refers to the rich flavor of the cheese.
The outside is made of mozzarella and the inside is a combination of mozzarella and cream. This gives the burrata a delicious taste and texture, which is perfect with a salad or pasta. You can serve the burrata with fresh tomatoes, basil, olive oil and salt, or with grilled vegetables, pesto and balsamic vinegar.
Burrata is a real delicacy that is best eaten at room temperature to bring out all the flavors.
The cheese is therefore super soft and “buttery”. So the word burrata means just that; Buttery! I put it on a delicious salad that, as you can read in the recipe below, can rightly be called "luxury salad with burrata"!
And this is how you make the Luxe salad with burrata:
-First cut off the ends of the green asparagus. Then cut them in half again. Take a frying pan and put a little olive oil in it. Fry the asparagus briefly and then squeeze a little balsamic cream over it. Turn off the fire and leave them until you are ready to put them on the plate.
- Grab a cutting board and halve the tomatoes. You can add these to taste. I put about 12 tomatoes per plate.
- Take a bowl or a plate and put some lamb's lettuce on it first. Then take the rest of the ingredients and place them all on the lamb's lettuce. Using a teaspoon, scoop some fresh pesto over the salad and toss it around gently.
- Finally, place the burrata in the middle. Pour some balsamic cream over it.

Finally, cut the burrata open with a sharp knife and enjoy the soft cheese in combination with the rest of the vegetables: delicious bites!

- pine nuts
- crackers or pieces of toasted bread
- Cherry tomatoes - yellow/orange and red
- fresh pesto - as a dressing
