Mafal-watte? The name of this pasta is not as well known as the regular spaghetti. We also know him under the name reginette, Mafalda or mafalde. So it looks like long ribbed ribbons, they are about an inch wide. But the preparation is just exactly the same as regular pasta. Water and salt and then cook for 8 to 10 minutes.

The pasta owes its name to Princess Mafalda. Born in Rome 1902. She married Prince Philipp of Hesse, a German prince. Unfortunately also a member of the Nazi party. During the Second World War, however, Hitler got the idea that she was against the party and had her arrested.

It doesn't have to be complicated to be tasty!

She eventually lost her life in Buchenwald concentration camp at the age of 41. Later, the Italian government gave it its own stamp and the mafaldine got its name.

Ingredients:

  • 300 gr mafaldine paste - (regular spaghetti is also allowed)
  • 4 portobello mushrooms
  • 200 ml cooking cream
  • 3 el mascarpone
  • 200 gr Parmesan cheese
  • 75 ml White wine
  • 3 toes chopped garlic
  • fresh basil
  • fresh cress
  • peper
  • salt

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Slice the portobello mushrooms. Put some olive oil in a frying pan and fry the portobello slices until nicely brown. Sprinkle with some salt and pepper.
  • Meanwhile, cook the mafaldine pasta in a pan with plenty of boiling water and salt. About 8 to 9 minutes.
  • Remove the fried portobello mushrooms from the pan, pour in some more olive oil and the 75 ml white wine. Bring to the boil and add the mascarpone and cream and minced garlic. Stir the sauce well, then add the Parmesan cheese and add the pasta and portobello mushrooms.
  • Toss everything well so that the sauce is all over the pasta.
  • Take the plates and serve, finish with the basil and cress and sprinkle with some grated Parmesan cheese.
  • Delicious bites!
