Unfortunately, sweets are way too tasty... although if I have to choose between never having savory snacks again or never having sweet snacks again, that is a difficult choice. Anyway, I also love something sweet, and I made a slightly healthier snack with it. These dates are sweet in themselves and are often a nice addition if you are making a recipe in which you want to use some sugar. This time, this mascarpone date with caramelized nuts is the snack in itself, and I can recommend it to you. I already have one for the replacement of the well-known Snickers. Mascarpone date with caramelized nuts
We caramelize the nuts with some honey and olive oil. That's super easy, just wait a little while before tasting until they have cooled down because the nuts are really hot right out of the pan. You can quickly burn your tongue or palate. The mascarpone can be replaced with light cream cheese if necessary. This way you have a tasty snack that you can enjoy. I always keep my dates in the refrigerator, so they are a bit firmer and have a bit more bite.

Ingredients:
- 6 dates
- 2 el mascarpone
- 1 twig thyme
- 1 el olive oil
- 1 el honey
- 6 walnuts - chopped
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Take a small frying pan and add the honey and olive oil and heat it. When it starts to bubble, turn the heat down and add the walnuts and fry until they are nice and golden brown. Spoon onto a baking sheet and let cool.
- Cut open the dates and spread some mascarpone on them.
- Top with the walnuts and some thyme leaves.
- Delicious bites!
