Mascarpone date with caramelized nuts
We caramelize the nuts with some honey and olive oil, which gives a great flavor combination. That is super easy, but wait a moment before tasting them until they have cooled down, because the nuts are really hot straight from the pan. You can easily burn your tongue or palate.

The mascarpone can also be replaced with a light cream cheese, but for the creaminess a full version can also be used. This way you have a tasty snack that you can enjoy and that is also healthy. I always keep my dates in the fridge, that way they are a bit firmer and have a bit more bite, which makes the overall eating experience even better.

Ingredients:
- 6 dates
- 2 el mascarpone
- 1 twig thyme
- 1 el olive oil
- 1 el honey
- 6 walnuts - chopped
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Take a small frying pan and add the honey and olive oil and heat it. When it starts to bubble, turn the heat down and add the walnuts and fry until they are nice and golden brown. Spoon onto a baking sheet and let cool.
- Cut open the dates and spread some mascarpone on them.
- Top with the walnuts and some thyme leaves.
- Delicious bites!
