If there's one thing I hate, it's pastry cream. The texture, the mouthfeel, no I can't appreciate it and that for as long as I can remember. So I usually leave a strawberry shell cake at the bakery on the left. These are always filled with that, and to make matters worse they put a kind of gelatinous layer on the strawberries to make them shine. That doesn't make it any better for me... Time for a strawberry shell recipe that doesn't contain these parts! Oh and does that make it less tasty? No, in fact I really like my version a lot better than the bakery version! Mascarpone is originally from Italy and you can use it for all kinds of dishes. You make it by mixing cream with lemon juice, which gives it a smooth, creamy taste and texture. Mascarpone is a popular ingredient in many sweet dishes, such as the famous tiramisu, or you can use it as a base for sauces and glazes that you pour over cakes or pastries. You can also use it as an alternative to butter or cream in some recipes to make them richer and more creamy. You make this strawberry shell recipe very easily! You just need some time between baking, cooling, melting chocolate and letting it set again. So it is ideal to do on the weekend. I love strawberries, so I ate this strawberry pie in no time. The pastries are nice and handy, because I use ring cutters of about 10 cm in diameter.

Ingredients:

  • 6 to stick puff pastry
  • 1 box fresh strawberries
  • 500 ml whipped cream
  • 250 ml mascarpone
  • 75 gram pink chocolate drops
  • 3 el granulated sugar - +2 extra for the whipped cream
  • 2 el butter - to grease shape
  • 2 el flower - to "flower" form
  • 1 bag knock fix

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat your oven to 180 degrees.
  • Defrost your sheets of puff pastry and cut circles out of the dough with the cutting ring.
  • Butter the bottom of your muffin tin. (You put the baking tin upside down, we bake on the outside of the tin! ) Rub the outside of the bowls well with butter, then "flour" the bowls and pat the tin above your sink.
  • Rub the puff pastry circles with a little bit of water and sprinkle generously with granulated sugar. Place these circles on the greased balls of your muffin tin and press the edges well to form a kind of hat. Bake the shells until nice and golden brown in 20 to 22 minutes.
  • Now remove the shells from the tin and let them cool on a rack.
  • Beat the whipped cream with the mascarpone with 1 bag of klopfix and two tablespoons of granulated sugar into a thick whipped cream and put it in a piping bag with a serrated mouth. Place in the refrigerator until use.
  • Heat a pan with water and put a bowl in it, melt the chocolate drops in a bain Marie in this bowl. Immediately coat the insides of the shells with the melted chocolate and leave them on the rack until the chocolate has hardened.
  • Then fill the shells with some whipped cream mix and put some pieces of strawberry on top, pipe a nice swirl of whipped cream on top and enjoy!
  • Delicious bites!
The shells can be kept for a few days without whipped cream in a closed Tupperware box in the refrigerator.
Once you've infused them with whipped cream, you can keep them in the fridge for another day. 
You can make one ball from the edges of puff pastry that you have left over from cutting out. You then roll this out and cut long strips that you can braid. Sprinkle cheese on top and bake until deliciously crispy cheese sticks. 
You can use the remaining whipped cream for whipped cream puffs, for example.
