ATW: Around the World recipes. These recipes are shared with me by people from all over the world who have one thing in common: learning the French language. We are all members of a group that regularly speak to each other via Skype. Almost every continent is represented here. I asked everyone to share their secret recipe or family recipe with me. In this way I can also inspire people here in the Netherlands and share these secrets with you. Because if one thing is fraternised, it is dining together. This time the McGarry cranberry pie from my friend Kimberley. This recipe is from her grandmother and is from 1918! A real typical American recipe this pie. Of course you have to like the taste of cranberries, but you can also use all kinds of fruits for it. cranberry healthy
Single pie crust means one part of the pie, we need 2 parts because we are going to cover the top of the pie. So you have to make the ingredients from above twice. If you have a large food processor, you could double it and divide the dough in half. I stick to the original recipe and so make it twice.
Here's how to make the McGarry cranberry pie:
-Take your food processor and add the flour, sugar and salt and mix briefly. Then add the buttercups and mix it briefly each time. Finally, very slowly pour in the ice-cold water while mixing until a kind of dough ball forms in the device. Then he's done. Take a piece of cling film and sprinkle a little flour on it, then put the ball on top and flatten it a bit. Then immediately place in the fridge for at least half an hour. Repeat this one more time for the second ball and place it in the fridge as well.
-After half an hour, take one flat disk of dough from the refrigerator and roll out this dough with a rolling pin. Then put the dough in a quiche mold and trim the edge neatly. Put back in the fridge for half an hour.
To make the filling of the McGarry cranberry pie:
-While the mold is in the fridge, we make the filling. Take the cranberries and wash them for a while. Then cut all the cranberries down the middle. We do this so that they don't explode when they go into the oven later. Put them in a large bowl and add 300 grams of sugar, 6 tablespoons of agave syrup and the orange zest and mix together.
Now take the quiche tin with dough bottom out of the fridge and put the cranberry mix in it, divide it evenly over the entire bottom of the pie. Wet the edge a little with water and take the second ball of dough from the fridge. Also roll it out with the rolling pin into a large slice and carefully place it over the cranberry mix and press the edges neatly. Then cut a cross of about 5 centimeters in the center of the dough. Fold the edges back into a kind of window. Then put the cake back in the fridge for one hour. cranberries healthy
Baking the McGarry Cranberry Pie:
-Preheat your oven to 220 degrees. Remove the cake from the fridge and brush the top with the milk with a brush, then sprinkle 2 tablespoons of cane sugar on top and put it in the oven for 10 minutes.
-After 10 minutes, lower the temperature to 190 degrees and let it bake for 30 minutes.
-Meanwhile, we make the syrup, in a small saucepan you put 100 grams of sugar, 2 tablespoons of agava syrup, and two tablespoons of orange juice. Let it boil for a while and then lower the temperature, and remove it from the heat. (when your 30-minute timer expires, take the cake out of the oven)
-Remove the cake from the oven and pour the hot syrup in the middle of the window of the cake, put back in the oven and lower the oven temperature to 160 degrees again. Leave the cake in there for another 10 minutes.
Finally, remove the cake from the oven and let it cool and rest for at least three hours.
