Nice side dish for the BBQ. This delicious Mediterranean stuffed pepper. We use a pretty spicy cheese for this. And by spicy I mean it's a good stinker and pretty pungent in taste. -First light your BBQ and make sure it is hot, of course you can also prepare this recipe in the oven. You then preheat it to 200 degrees.
-Slice the peppers lengthwise. Carefully remove the seeds from the pepper.
-Then we're going to fill them, put in the cheese first.
- Cut the sun-dried tomatoes into pieces and finely chop the fresh parsley, then put it in the peppers, and finally the pine nuts. Season with the fresh hearty pepper.
- Then put them on the BBQ and let them cook slowly. If the bottom becomes too black, you can roll them tightly in aluminum foil and place them cut-side down in the same way. That way the cheese doesn't drip out.
When the peppers are soft, they are ready and you can serve them. Delicious with a fresh wine: Delicious Happen!
