In France during the holidays, a large bag of Madeleines is normally thrown into the shopping cart. My daughter called them UFO cupcakes for a long time. Until recently I had never baked a Madeleine myself, and that while I have had a really nice baking tin in my cupboard for a long time. Got it for my birthday and so far I've been gathering dust and patiently waiting to finally see the light. madeleine recipe

Madeleines are small, light and airy cakes that originated in France. They are often served as a pastry with coffee or tea and are shaped like a shell.
The origins of the madeleine are not entirely clear, but it is likely that they were first made in the French town of Commercy in the Lorraine region. There is a legend that the madeleine was named after a maid named Madeleine who made these cakes for Stanislaus I, the Duke of Lorraine.
This recipe isn't quite mine, but Nora French's. I did bake it in a completely different way, and made a topping myself. And so suddenly there were these savory Mediterranean Madeleines with pink topping. And now I will definitely make Madeleines more often… you can wait for very nice tasty recipes.

Who oh who is Madeleine? It would have been a farmer's wife in the 18th century who had an unexpected visit from a Duke, with everything she had at home quickly crafted these delicious cakes. True or False…. we can be thankful to her. Today, they are therefore fully machine-produced in factories.

Yet I secretly have to confess that the tastiest are the handmade and home-baked Madeleines. If you are ever in Aix en Provence in the south of France, you must go and buy them at Christophe Madeleines in the heart of the center of Aix, the best food you will ever eat… A big box for a tenner that is really worth every euro!

The characteristic appearance of the madeleine is obtained by the shape of the baking tin into which the batter is poured. This mold is shaped like a shell and ensures that the outside of the madeleine is crispy and lightly browned while the inside remains soft and airy.

Ingredients:
- 5 eggs
- 100 ml olive oil
- 350 gr broccoli florets
- 100 gr Parmesan cheese
- 100 gr almond flour
- 2 hands basil leaves
- 2 toes Garlic
- 1 el apple cider vinegar
- 1 tl baking soda
- ½ tl salt
- pine nuts - for the decoration
For the pink topping you will need:
- 100 gr cream cheese
- 1 rode boiled beetroot
- garlic powder
- peper
- salt
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- We first make the cream cheese so that it can stiffen again in the fridge. Place the cooked beetroot in your blender and chop until finely chopped. Add salt, pepper and garlic powder to taste and add the cream cheese. Turn the blender on again and mix everything well into a soft mousse. Scoop with a spoon into a piping bag and let it set in the fridge.
- Turn your oven on to 170 degrees and let it preheat.
- Take your (clean) blender or food processor and break the eggs in it and add the olive oil. Then fill it with all the ingredients on the list for the Madeleines. Mix on low speed at first and increase once it becomes liquid. Mix it all until it becomes a soft batter.
- Take your baking tin and spoon a good tablespoon of batter into each shell. Sprinkle some pine nuts on the batter. Place in the oven and bake for 25-30 minutes until nicely cooked. (poke with a skewer to see if they are well cooked inside)
- Let them cool and pipe a dollop of cream cheese on top with the piping bag.
