Recently I went to lunch somewhere in Den Bosch and ordered this bowl. Although not bad, I mainly missed taste… The scrambled eggs had no taste, the hummus was “bland” in taste, the pumpkin was cooked perfectly but it didn’t have much taste either. All in all, for a bowl that you pay 12 euros for, I mainly missed taste! And that is so easy to add. Herb mixes, salt, pepper, these spices can create an explosion of taste in a bowl. And when I hear the word “Mediterranean”, I mainly think of taste. This Mediterranean pumpkin lunch bowl is also one that you can use as “meal prep”, because it is also easy to take with you to work.

For example, I used the spice mixes za 'atar from the Middle East, baharat an Arabic mix, but also roasted garlic and of course pepper and salt. All these flavors mix perfectly and give this bowl a real flavor explosion. Many times more than the bowl that was served to me. Of course I understand that the lunchroom may not want to serve too pronounced flavors. In any case, it gave me inspiration to get started with it at home.

Ingredients:

  • 200 gram pumpkin
  • 150 gram baby spinach
  • 4 eggs
  • 100 gram hummus
  • 2 balls spelt bread
  • 10 Cherry tomatoes
  • 4 el tofu dip - (see notes for recipe)
  • 2 el olive oil
  • 1 el za 'atar spice mix
  • peper
  • salt
  • 1 tl baharat spice mix

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Slice the pumpkin and drizzle olive oil over it and the baharat. Put in the oven at 200 degrees and bake for 35/40 minutes until done.
  • In a frying pan, make nice scrambled eggs from the 4 eggs.
  • Grab 2 bowls and add the spinach and the rest of the ingredients.
  • Sprinkle with the za 'atar and salt and pepper to taste.
  • Delicious bites!
