To be quite honest, I didn't come to appreciate spinach until much later in life. And especially eating raw spinach in a salad, for example. Because otherwise spinach is really only a vegetable that I use in green smoothies. I hardly ever use it boiled or in any other way in a warm dish. And after a quick check on my own website, I see that I regularly use it in a recipe, but as an extra vegetable with pasta, for example. But in this Mediterranean spinach salad with lemon vinaigrette, the spinach takes on a leading role. And this is how you make the Mediterranean spinach salad with lemon vinaigrette:
Take a large bowl with it, add the spinach first. I bought spinach washed in ice water, so I didn't wash it at home again. If you have fresh spinach, you should do that to make sure all the sand has been washed off.
Cut the tomatoes in half, clean the shallot and cut it into half rings.
If you have a block of cheese, cut off a piece and then cut it into small cubes. Do you want to make it really easy for yourself? In the supermarket they also sell pre-cut cubes.
Making the vinaigrette
I used a weck jar for this, when you close it it is hermetically sealed and you can shake the jar vigorously. Put all the ingredients in the jar and shake it vigorously until everything is well mixed. Scoop a few spoonfuls onto the spinach with a spoon and toss before adding all the other ingredients to the salad.

- 10 Sun dried tomatoes
- 1 shallot
- handful green olives
