We don't eat chicken fillet very often here at home. Although it is the most eaten piece of chicken meat in the Netherlands, we prefer chicken thighs, or a whole chicken. When I make chicken fillet, I also want it to remain nice and "juicy" and have a lot of flavor. The meat itself is not that exciting in taste. I will definitely be making this stuffed chicken breast recipe again and again. The nice thing is of course that you can also fill it in other ways. Want some more spices? Spread a spoonful of sambal in it, and in this way you can also make an Oriental sauce. Use coconut cream and some soy sauce for that.
This recipe shows that with a little creativity you can make a completely different dish. This chicken fillet filled with tapenade and served with cream sauce is not as spicy as the original, but very tasty!

Ingredients:
- 4 chicken breast - big
- 1 bowl mozzarella cheese
- 1 bag spinach
- 12 Sun dried tomatoes
- 1 can black olives Tapenade
- 250 ml cooking cream
- 100 gr grated Parmesan cheese
- 1 el capers
from your spice cabinet / drawer
- 2 twigs fresh thyme
- salt
- peper
- 1 el persillade spice mix
- olive oil

And this is how you make it:
- Cut the chicken breast in half horizontally from the convex side, not all the way through, but far enough so that you can open them and you get a kind of heart shape.
- Spread the chicken breasts on both insides with two tablespoons of black tapenade per chicken breast. Place some spinach leaves on one half, then two slices of mozzarella, then 1 sun-dried tomatoes and close the fillet. Secure the meat with wooden skewers. Repeat with all fillets.
- Heat your frying pan and add a good splash of olive oil. Fry the chicken breasts on both sides until golden brown.
- Pour the cooking cream into the pan and grate the cheese over the chicken breasts. Continue to simmer gently in the sauce over a low heat. Add two sprigs of thyme in the sauce, it gives off a delicious taste.
- Just before serving, sprinkle some cheese and the capers on top.
