Salads are an endless source of inspiration. The amount of different vegetables or fruits that you can use is enormous. Some people are not a big fan of using fruit in a savory gerecht but I love it. The minneolas in this minneola salad with fried bacon are super juicy and sweet. Did you know that this fruit is a cross between a grapefruit and a mandarin? So if you don't like the somewhat bitter taste of grapefruit, this is an ideal replacement. mineola salad

The skin comes off the fruit very easily and it is therefore easier to peel than the grapefruit. Because this fruit is so juicy, I kept the dressing super basic in this salad. We choose just a little olive oil. Of good quality of course!

In this dish we use poppy seeds. In the Netherlands you mainly find these on bread. Fun fact about these seeds is that they contain traces of the active substances in opiates. (For example, heroin is also made from poppy bulbs). No worries, a few poppy seeds won't drive you crazy , but if you would do an extensive drug test, it will work if you've eaten poppy seeds...

The choice for an olive oil as a dressing was made because the minneola itself is already very juicy. If you put more dressing on it I'm afraid it will be too wet a salad. I chose an extra virgin olive oil. You can of course vary this by using, for example, a walnut or other type of oil.

You need:

Ingredients:

  • 2 minneolas
  • 100 gram bacon
  • 1 handful almond slivers
  • 3 el pomegranate seeds
  • olive oil
  • 1 el poppy seed
  • 1 zak rocket salad

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Take the frying pan and briefly toast the almond shavings in it first. When they turn light brown, put them on a saucer and let them cool until ready to use.
  • Add the bacon to the skillet and fry until crispy. Let them drain in a colander over a bowl.
  • Peel the minneola and remove the white skins from the outside. Cut the minneola into slices and halve them.
  • Take the plates and divide the arugula over it. Place the minneola on top and drizzle some olive oil all over the salad.
  • Finish the salad by sprinkling the almonds, pine nuts, bacon and poppy seeds on top.
In this recipe I also used the leaves from the end of a fennel. If you don't have fresh fennel at home, you can always sprinkle some fennel seeds for some extra flavor.
