Zeeland mussels are one of my favorite summer dishes. I love to eat them with a piece of bread and a glass of white wine. But sometimes I want to try something different. That is why I came up with this recipe for mussels with samphire and sea lavender. These are two types of sea vegetables that have a salty taste and go very well with the mussels. They are also very healthy, because they contain many minerals and vitamins. Mussels in Zeeland style
And this is how you make the mussels with samphire and sea lavender:
We'll start with the vegetables. Peel the carrot and cut it in the middle, then cut it into thin slices. Peel the onion and cut it in half and into slices as well. Cut the celery and garlic stalks into small pieces.
Wash the samphire and sea lavender with some cold water and drain in a colander.
For the mussels with samphire and sea lavender, remove the mussels from the container and place them in your sink with cold water. Discard the mussels that are open. Drain the water and then rinse them again with cold water.
The mussel pan
Take a large pan and heat it. Put a tablespoon of butter in the pan and first fry the celery, carrot, onion and garlic for a few minutes until the onion becomes slightly translucent. Add the samphire and sea lavender and toss everything together. Season with some freshly ground pepper. Toss the mussels in the pan and pour over the wine. Cover the pan and cook for only 5 to 6 minutes. Toss the pan once or twice so that the vegetables are evenly distributed over the mussels.

Serve the mussels in a large bowl. I served it with delicious crusty baguette with three different dips. Of course, a nice white wine or a bubble can not be missed! Delicious bites

- 1 file Neeltje Jans Zeeland mussels - 1 door per 2 people
- 1 bag samphire - 200 gram
- 1 bag lamb ears - 200 gram
- 1 winter carrot
- 1 large white onion
- 2 toes Garlic
- 100 ml White wine - good quality
- 2 stems celery
- butter
- 1 baguette
