This tzatziki is a tzatziki+!! We deviate from the standard and add some extra ingredients, and trust me when I say it tastes good! The fridge was once again full of all kinds of loose vegetables that were left over from other recipes. So time to use it and make something delicious with it. It became this naan with cod and tzatziki and that is highly recommended.

Eating fish regularly is good for health. Vit wis is a good choice, see what your supermarket or fishmonger has on offer. If it happens to be cod, then definitely buy it, but if it happens to be a different species of fish, it is no problem to use it. The same goes for the vegetables I used. Just put on what you have in your fridge.

The amount of tzatziki we make with this naan with cod and tzatziki is too much for two naans. But what's left you just keep in the fridge for a day out of two! Spread it on a sandwich the next day, dip it with pieces of cucumber and carrot, because we don't throw that away!

You need:

Ingredients:

  • 150 gram cod fillet
  • 2 Naan bread
  • 4 Cherry tomatoes
  • 4 green asparagus
  • 8 green olives

For the tzatziki you will need:

  • ½ cucumber - coarsely grated
  • 1 el capers
  • 2 twigs Parsley - finely chopped
  • 4 el low-fat quark
  • 1 tl persillade spice mix
  • 1 teen Garlic - squeezed

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • First we make the tzatziki, grate the cucumber with a coarse grater. Squeeze the cucumber over the sink, or drain well in a colander, which will take a little longer.
  • Chop the parsley and place in a bowl with the cucumber and the rest of the ingredients for the tzatziki and mix well. Set aside in the refrigerator until use.
  • Grill the green asparagus in a grill pan with some oil, then fry the naan on both sides for 30 seconds.
  • Meanwhile, fry the cod in a frying pan. Season with some salt and pepper.
  • Spread a layer of tzatziki on the naans and place the cod on top, which you divide into pieces over the naan. Finish with the tomatoes, olives, and asparagus.
  • Delicious bites!
