I recently made a fantastic pesto with some leftover purslane. This pesto tasted great on its own, but I also wanted to use it with something. To get inspiration, I created a poll on Instagram with the question “what is your most surprising recipe with pesto?”. To my surprise, about 95% came up with the idea of making a pasta pesto. Although super tasty, I still wanted to be a little more surprising. That's why I made this naan pizza with pesto and cherry sauce with it. Naan pizza recipe
A combination of flavors that turned out to fit together really well. Moreover, cherries and purslane are in season at the moment, so that is also an advantage.
And this is how you make the naan pizza with pesto and cherry sauce:
First we make the cherry sauce. Pit the cherries and cut them into small pieces. Put them in a saucepan together with the pieces of summer fruit from the freezer box and the 50 ml water. Add the sachet of vanilla sugar and stir it all together.
Vanilla sugar is a type of sweetener used to sweeten dishes and desserts. It contains sugar and a small amount of vanilla extract and is mostly used in baking recipes, such as cakes, cookies, ice cream and other sweet treats. It is an easy-to-use alternative to vanilla extract and adds a subtle vanilla flavor to dishes. However, some brands of vanilla sugar do not contain real vanilla, but artificial flavors, so it's important to check the ingredient list if you're looking for a pure vanilla flavor.
Bring to the boil and let it simmer until the fruits are completely soft. When they are completely soft, mash them all with a fork. Add the cornstarch paste and let it all become a thick sauce on a low heat.
To make the naan pizza:
Take a large bowl and add the flour, yogurt and salt, mix it all and knead it into a ball. It can be a little sticky. Divide the ball into four pieces and shape into small circles. Brush the top and bottom with olive oil and sprinkle with some herbs. Then grill the naan pizzas in a grill pan or on a grill device for 2 minutes on both sides.

Take plates or a wooden serving board and place the pizzas on it. Spread the pesto first and then spoon the cherry sauce on top. Put the goat cheese on top and decorate with some pine nuts and some leaves of purslane

- 200 gr self-raising flour
- 150 gr full yogurt
- 4 gr salt
- Provencal herbs
- olive oil
For the cherry sauce you will need:
- 15 big cherries
- 150 gr summer fruit - from a freezer box
- 1 bag vanilla sugar
- 50 ml water
- cornstarch - porridge of 1 tbsp cornflour and 3 tbsp water
The rest of the ingredients
- Goat cheese
- purslane pesto
- some purslane leaves for decoration
