La cucina povera, or the poor man's kitchen. Yet those Italians are not at all wrong with these simple dishes. Nothing tastes better than a simple plate of spaghetti with just a few ingredients. This recipe aglio e olio is regularly on the table here. If you want to eat quickly, or just have no idea what to make, just serve this Neapolitan spaghetti aglio e olio. (Also nice at the table with a spaghetti Napolitan with Napolitana sauce. )

My favorite herb parsley, freshly ground black pepper, good extra virgin olive oil and a red pepper are incorporated. It can be that simple. Incidentally, the version with the pepper is actually called spaghetti aglio olio peperoncino. The last word referring to the red pepper. Tutti a tavola! (Also nice at the table with a spaghetti Napolitan with Napolitana sauce. )

I also often make this spaghetti aglio olio peperoncino on vacation. A deliciously simple dish that is ready in no time and everyone likes it. All you need is spaghetti, garlic, olive oil, red pepper and parsley. You cook the spaghetti al dente and fry the garlic and pepper in the oil until golden brown. Then you mix everything together and sprinkle it with parsley.

So simple and so delicious! Actually, adapting is a kind of swearing in the church as far as the Italians are concerned, but... stubborn as I am, I sometimes add capers, olives and sun-dried tomatoes to the oil in the frying pan. Then you have a super extensive spaghetti aglio e olio that has even more flavor. You can also grate some Parmesan cheese on top if you like. This is truly a dish you will never get enough of!

Ingredients:

  • 500 gram spaghetti
  • 1 Spanish / chili pepper - cut into rings
  • 4 twigs Parsley - finely chopped
  • 5 cloves Garlic - cut into slices
  • 75 ml extra virgin olive oil

From the spice drawer:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Cut the red pepper into rings, the garlic into slices, and finely chop the parsley.
  • Grab your frying pan and add the olive oil, turn the heat to low so your garlic doesn't burn! Add the red pepper and garlic to the pan and let it rest.
  • Cook the spaghetti in a pan with plenty of water and a generous spoonful of salt.
  • Once cooked, drain the spaghetti in a colander, then toss into the pan with the olive oil. Sprinkle the parsley and some black pepper on top and toss well!
  • Serve immediately with some Parmesan cheese on the side, if desired.
  • Delicious bites!
