The main ingredient in these no bake cashew chocolate brownies are actually dates, not cashews as the title says. These grow on the female date tree. Dates are rich in vitamins A and B, but also contain iron, magnesium and phosphorus.

- 250 gram dates
- 100 gram unroasted cashew nuts
- 25 gram cocoa powder
- 40 gram coconut oil from jar
- 1 teaspoon coarse sea salt
- 1 tablespoon coconut blossom sugar
- 1 teaspoon vanilla extract
For the chocolate ganache:
- 80 gram coconut oil from jar
- 60 ml maple syrup
- 20 gram cocoa powder
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Weigh and measure all ingredients into containers. (Or not, of course you don't have to). You don't have to melt the coconut oil.
- Take the food processor and add all the ingredients for the brownies in it first. Switch on the machine and run for a few minutes until everything is well ground and the nuts are small dots.
- Take your bowl or baking tin and place a sheet of kitchen foil in it. Remove the crushed brownie from the food processor and press it into the mold with your fingers. It is a bit sticky and grainy, so press it down well, it will stiffen up in the fridge later.
- Put the bowl back on the food processor, you don't have to clean it. Spoon in all the ingredients for the ganache and swirl until you have a smooth, soft mass.
- Use a spatula to empty the bowl and pour it over the brownie. Evenly distribute so that the layer is evenly thick.
- Put in the fridge for half an hour to an hour, then you can cut them into cubes.
