Primal potato stamp with string beans

Estimated reading time: 3 minutes

Winter is just around the corner. The ideal time to get started with stews again. Delicious traditional Dutch dishes with a big smoked sausage and bacon. And of course this is so easy to make. In this recipe I used ancient potatoes. These come from the Andes mountains. They have a warm yellow, sometimes almost orange color. And that is why they are super nice for a stew, because they give the whole thing a little more color. This ancient potato mash with French beans was very popular here at home, so now you can get started with it too. French beans stew

And this is how you make the Primal potato mash with string beans::

-We start with the potatoes first, peel them and cut them in the middle. Take a pan with plenty of water and add salt. Boil the potatoes for 20 minutes.

-In another pan, cook the chopped string beans for about 12/14 minutes.

-Take a frying pan and fry the bacon crispy in it, I always buy them unseasoned so that I can do it to my own taste.

-In a small frying pan, fry the bacon cubes until crisp and pour the fat into a small bowl.

-I steamed the smoked sausage in my steam oven for 20 minutes, if you don't have it now, cook it according to the instructions in water.

-When the potatoes are cooked, drain them and put them back in the pan, add the splash of milk, a cube of butter and the collected fat from the bacon cubes and mash it into a coarse puree. Then season with freshly ground pepper. Then add the bacon cubes and string beans and mix everything together.

    1. In this case, add more vegetables and a little less potatoes, add a slightly less fatty piece of meat or fish, replace the gravy with vinegar or mustard, etc.
But every now and then there's nothing wrong with a nice stew like this one, you'll end up with around 700/800 calories. Adjust your breakfast and lunch so that you eat a little less for the rest of the day: voila: delicious bites!
