The nice thing about working with a magazine like Foodies are the various assignments. You are assigned a certain vegetable or product, and you try to make something tasty with it. And a bit “outside of the box”, because gingerbread with butter, well, we know that. In keeping with the theme of this edition, I chose pumpkin and pumpkin spicee ricotta. And with that we make gingerbread toast with pumpkin. a delicious gingerbread recipe.

This gingerbread toast with pumpkin is not only a great lunch dish, but also a surprising snack with drinks. Since gingerbread is already sweet, the pumpkin spice herbs and pumpkin puree go perfectly with it.
Additionally, I used ricotta, but you could also use cottage cheese. Caramelizing the nuts is a simple job. However, you can store this in a sealed box in the refrigerator for a few days.
Baking the gingerbread again in the oven makes it crispy. This looks a bit like a piece of toast. That's why I would advise you to eat it immediately afterwards. Otherwise you won't be able to keep it for additional days as it will get old quickly. Anyway, I can imagine that you will eat all your toast right away, because it is so tasty!

Ingredients:
- 250 gram pumpkin - peeled and cubed
- 100 gram ricotta cheese
- 1 tl pumpkin spice spice mix
- 1 el honey
- 1 el olive oil
- 2 el mixed nuts - finely chopped
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Boil the pumpkin until the cubes are soft in about 10 to 12 minutes. Drain well and then mash them into a soft puree.
- Preheat the oven to 180 degrees.
- Pour the olive oil and 1 tbsp honey into the frying pan and add the chopped nuts. Let caramelize over low heat. As soon as the whole is golden brown, scoop it on a piece of baking paper (blowing hot!!) and let it cool, this will make the nuts nice and crispy.
- Spread a few slices of gingerbread with some honey and crumble 1 slice into crumbs. Place it on your baking tray and bake for 8 minutes. Remove from the oven and let cool, this will make it nice and crispy!
- Beat the ricotta and mix with the pumpkin spice spice mix.
- Spread the toast with some pumpkin puree and then spoon the ricotta on top. Sprinkle with some gingerbread crumbs and the caramelized nuts.
