I got both the lobster and the sea lavender in this recipe from Chris, unfortunately due to all the corona measures this year there was no festive opening of the Oosterschelde lobster season. Normally this is a wonderful event on Zeeland waters with a nice lunch with lobster. And because the restaurants are also closed, there is only a limited purchase of this delicacy.

Ingredients:
- 1 Oosterschelde lobster
For the herb butter you will need:
- 1 handful sea lavender
- 10 twigs samphire
- 2 toes garlic pressed
- 100 gr unsalted butter
- 6 el olive oil
- peper
- chili flakes
- salt - be careful with it
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 200 degrees.
- Take the cooked lobster and put it on a large cutting board, its tail will be curled, lay it flat. Spread the scissors neatly to the left and right of the head so that they are not in the way.
- Take a heavy and sharp knife and insert the point in the part where the end of the head is and the tail begins. With force you push the knife in the middle of the head down. So you halve the head exactly until you arrive at the front of the eyes. Repeat this with the tail, so your lobster is halved.
- Take out the intestinal tract and the stomach contents contained in the cup. Loosen the scissors and give them a few good taps so that they split open.
- Place the lobster meat side up on a baking tray.
To make the sea lavender herb butter:
- Take a bowl and mash in the soft butter with the olive oil until you get a soft sauce.
- Finely chop the cleaned sea lavender and samphire, press the garlic.
- Mix everything well with the butter and season with pepper, chili flakes and possibly some sea salt.
Grilling the lobster
- Spoon some of the herb butter onto the lobster with a spoon. Place it in the oven and switch the oven setting to grill mode. Grill the lobster for 6 minutes or until the meat is very hot.
- Serve with some fries and the rest of the sea lavender herb butter.
