- 4 pieces of cod with skin
- 300 gram green beans

For the butter sauce you will need:

And this is how you make it:
- We make the puree by peeling the potatoes and boiling them for 20 minutes. Drain and return to the pan. Add some salt, pepper, and nutmeg. Add 2 tablespoons of soft butter and pour the milk into the pan. With a pestle you mash the puree softly, if it is still a little too dry, add some extra milk. With two spoons you can make "quenelles".
- Clean the green beans and cook them for 10 minutes until al dente.
- Make the sauce by first melting the butter in a saucepan. Then add the flour and fry it briefly (you make a roux) while stirring, whisk in the stock with a whisk so that a sauce is created. Then add the extra butter and season with salt and pepper. Leave on very low to keep warm.
- Dip the cod skin in the flour and beat. Heat the frying pan and add some olive oil. Heat your oven to 160 degrees. Bake the cod on its skin for about three minutes, then scoop it onto a dish and let it cook for another three minutes in the oven. Fry the samphire very briefly and set aside.
- Take your bowls or plates and scoop some green beans on top, pour some sauce over them. Place the fish on top, skin side up. Pour over some sauce and top with the samphire. Serve with the mashed potatoes.
